A Sprinkle of History
Mount Amiata (1738 metres), an ancient volcano that became extinct 200.000 years ago, was inhabited first by the etruscans who who first expoited its undersoil reach in iron and mercury, and later by the romans. In the middle ages Mount Amiata became strategically important fot communications between rome and the rest of Europe, The tirrenian coastal route (Via Aurelia) was infested by malaria and bandits, and the Via cassia was equally insecure also because of the unstable neighbouring byzantine empire. A new route parallel to the eastern slopes of Mount Amiata (Via Francigena). In order to control the surrounded territory and to rely on secure overnight stops benedectine monks founded in the VIIIth century the Abbey of San Salvatore that soon became a major administrative and cultural centre spreadings its influence over the whole area. The monks studied the local soil and climate and set the guide lines for the development of local soil and climate and set the guide lines for the development of local agriculture-still evident nowadays. They planted olive groves between 300 metres and 700 metres above sea level, chesnut trees-the renowned "marroni" variety - between 500 and 1000 metres and fir trees between1000 and 1700 metres. The olivastra of Seggiano is a prized variety of olive tree typical of the south-westren slopes of Mount Amiata: it yelds a high qualityextra-virgin olive oil with a very low acidity (0,1%) and a higher than average content of oleic acid (the so-called anti cholesteroil factor). It is very digestible and its delicate flavour is particularly suited for vegetables (both raw and boiled) legume dressing and for fish and "bruschetta" (toasted bread rubbed with garlic) seasoning.
